What are truffles?
Truffles are bite-sized chocolate desserts that are traditionally named after their striking resemblance to the truffle mushrooms. However, the truffles in this recipe will be bright red in color, due to the freeze-dried strawberry powder used in the coating. This makes these truffles different from the traditional chocolate truffles which are dusted with cocoa powder.
What do you need to make this vegan dark chocolate strawberry truffles?
For these vegan chocolate strawberry truffles, you just need the following 3 ingredients:
- Dark chocolate chips
- Canned full-fat coconut cream (the white solid part)
- Freeze-dried strawberries
You will also need the following equipment:
- 1.5 tbsp cookie scoop.
The striking bright red color of these truffles makes them the perfect indulgent treats to gift to a loved one for Valentine's day! This recipe makes 14 truffles, so there's definitely a couple left over for yourself also.
How to make vegan dark chocolate strawberry truffles
- Place the chocolate chips in a microwave safe bowl (preferably glass) and heat for 30 seconds on high power. Place the coconut cream in a smaller microwave safe bowl and heat for 1 minute on high power. Do this in 10 second intervals to prevent the ingredients from burning.
- Pour the heated coconut cream over the warmed chocolate chips, and stir with a spatula to combine.
- Make strawberry powder by pulsing the strawberries in a food processor or a blender for a few minutes.
- Add 2 tbsp of strawberry powder to the chocolate mixture and mix until incorporated.
- Set aside the rest of the strawberry powder in an airtight container until later. Place the chocolate mixture in the freezer for 30 mins to solidify the mixture for scooping.
- Scoop out the mixture with a cookie scoop and place them evenly-spaced on a freezer-safe tray. There should be approximately 14 scoops. Put the freezer-safe tray back in the freezer for another 20 minutes.
- Take the tray out of the freezer and using your hands, roll the truffles so that they become spherical in shape. If they are too frozen, leave them to warm up for 10-15 minutes before shaping them with your hands.
- Lightly dust the truffles with the strawberry powder, and place in mini cupcake liners before serving.
Tips and tricks
- Use quality ingredients. Because this recipe only calls for 3 ingredients, it is important that you don't skimp on the materials. I recommend dark chocolate chips (at least 65%) and full-fat canned coconut cream for best results.
- Use the freezer. You can cut down the waiting time significantly by using the freezer to chill the mixture before creating the bite-sized shapes.
- Use a cookie scoop. This will help you create uniformly shaped truffles. I used a 1.5 tbsp cookie scoop.
- Use small cupcake liners. The truffles tend to adopt a slightly sticky texture once the strawberry powder is applied. This will prevent the truffles from sticking to one another.
